Banana Blondies with Cream Cheese Frosting
Wonderful and delicious banana blondies with a hint of cinnamon and topped with the perfect cream cheese frosting. A definite crowd pleaser!

- 1/2 cup butter {melted}
- 1 cup brown sugar {packed}
- 2 tsp vanilla extract
- 1 egg
- 1 tsp cinnamon
- 1/4 tsp salt
- 1 cup flour
- 1/2 cup bananas {mashed} I used 1 banana
- Cream Cheese Frosting
- 2 oz cream cheese {softened}
- 2 tbsp butter {softened}
- 3/4 cup powdered sugar
- 1/2 tsp vanilla extract
Instructions :
- Preheat oven to 350° and spray your 8x8 pan with non-stick spray, set aside.
- In a medium bowl combine the melted butter, brown sugar, vanilla and egg. Stir {by hand} until everything is nicely incorporated and you have a thick mixture.
- Add the cinnamon, salt, flour and mashed banana to the butter and brown sugar mixture. Mix {by hand} until all of the ingredients are incorporated. Pour batter into the prepared 8x8 baking pan.
- Bake for 18-22 minutes or until the edges of the blondies are slightly browned. The middle will be set but still look a little under cooked. Remove from the oven and let them cool.
- Once your banana blondies are cooled, combine the frosting ingredients and mix {I used a hand held mixer} until you have a smooth consistency. It will be thick for a few seconds but keep mixing and it will loosen up. Add frosting to the top of the banana blondies and spread out into an even layer.
- Cut your banana blondies into squares and serve. Keep covered at room temperature for up to 4 days or refrigerate covered for up to 5 days.
